Yes, the outlooks .pst file is the major reason profiles in my office grow so large. Our company policy is to save ALL email message (I hate it.). Remove this beast from the profiles tree and you have a profile that isn't to bad to pull across a network at boot-up. The problem with this is you don't bring your email messages and address book with you when you play musical workstations.. What's the first thing most people do when they site down at their workstation in the morning --- check email... There's my hang-up with roaming profiles.
