I also did SCO Xenix and Unix servers for years. BackupEdge (formerly C-TAR)
was the backup tool of choice. I used it for years almost identically to
what you described. The nice bit -- when you need to do a full system
restore you simply boot the recovery disks, answer a few prompts about disk
space (if necessary, like if using a new drive), then load the master backup
and the last incremental backup. Once that is done you have a 100% recovered
system.

Also, every bit of what BackupEdge does can also be done from the command
line. The screen interface is nice, but not mandatory.

Unfortunately, I no longer use BackupEdge. My current environment allows me
to backup to another server. But, if I needed a backup tool and was serious
about it, I'd buy BackupEdge in a heartbeat.
