Either will work. I have both situations - some remote offices handled
by the central server and some with their own server. The decision
was based on whether the office already had a suitable server on
backup power and a staff that knew how to do at least minimal
troubleshooting. In our case, the offices without their own servers
couldn't do much in the rare case of the WAN being down anyway. In
a couple of years of operation I would say that the centrally-served
sites have been less trouble but the only real problem was with
an earlier version of dchpd that could be tricked into abandoning
all its addresses. I'd go with the same choice you make for
larger services like email - if an office has a server for email
it might as well handle dhcp too. If email is on a central hub
do the same with dhcp. The network and CPU use is almost irrelevant
compared to managing the machines.
