If you cannot get syslog'ing to work, please run the server with the
'-d' debug flag and see what it says.
We probably won't be able to help you if we can't see log messages.
This is probably the first thing to fix.

127.0.0.1 should also work.
Did you touch the files in /var/log before restarting bind?
