Dear Grace, it is not so difficult or complicated. If you can estimate the sugar content in the honey solution, please see to it that the daily amount of sugar entering into the digester is not more than daily 1 g per liter of digester capacity. If however, you use the technology called anaerobic filter, you can safely intoduce 5g sugar per litre of digester capacity. Since you already have honey, add a cupful of milk once in a while to provide the nitrogen, and enjoy life in a land of milk and honey. Yours A.D.Karve
