in theory I think you're right. In practice, I tend to disagree with your point of view.
I think bacteria consortium depends on the mix of substrates and on its composition.
My mix, in the case substrates quantities vary during the year, continuously changes its relative composition (i.e. substrates relative percentages).
In this case the biogas produced will change its characteristics more than just its quantity.
Furthermore, running an anaerobic digester with a variable mix of feed it's not the simplest thing ever: you could have, in some period of the year, an exceeding percentage of..let's say, milk whey, which could cause an excess nitrogen content in the mix, causing the inhibition of the process.
The total solid concentration will continuously change if I just feed the digester with a variable quantity of biomass...and so on.
That's my point of view. I'm open to new suggestions or correction,
I'm here to learn!

Digestion relies upon the volume of feedstock available and the density of
suitable microbes.
Should your volume decrease throughout the seasons, the density of microbes
will adjust to the reduced input.
It takes about three weeks to complete a digestion cycle, and during this
time organisms feed, breed and die.
They will organize a regime to suit circumstances. If they run out of food,
they will simply go dormant. They are always there somewhere, waiting.....
