RW, We provide the opportunity for the registrant to update his contact information, which may be out of date, during a registrar transfer. This is how it's always worked at OpenSRS. We're currently working on a tool that can "Pre-Populate" some data at some existing registrars so the information will not change.
Also (and this is an older feature), when you are accepting a transfer request, there is a "Whois Comparitor" button that allows you to see what the current (losing registrar) whois looks like and what the new (us, gaining registrar) whois will look like.
