My first thought for you would be to use a simplified  written Use
Case template:

I imagine you could mainly focus on the Goals, Preconditions and
Description (Steps) to describe a task and series of action a user
could take through your website. You can also use Extensions to cover
any branches in the flow of the site (e.g. :If the User is not signed
in, they will be taken to the Sign in page")...The site linked above
does describe other items which might be useful, but they will add
complexity so be careful.
