I design enterprise software, and we have been asking the same questions
about Flash. One nice aspect of my position is that we can have minimum
system reqs that customers must to meet, so we don't need to worry about the
odd user who doesn't have the plugin. Wherein we think it might be
particularly useful is in designing interactive flow and business process
diagrams.  Not only can they be designed in an incredibly spiffy and
engaging fashion, but the ability to zoom in and out, drag objects around
the screen, and the xml compatibility are very appealing (especially now
that Adobe is retiring SVG.)  We are also investigating the possibility of
using it for real time reporting displayed in charts, graphs, and other
"live" data feeds as an alternative to ajax.   You definitely need a very
savvy actionscript developer to do this kind of thing though and, frankly, a
designer who's practically an ex-Disney animator!

Have fun with it; it's an intriguing technology.
