Back when I was working for a research faculty member at CMU, I
created a prototype application in Macromedia Director for viewing
aircraft maintenance manuals. I know, that sounds boring. Here's the
cool part:

The software ran on a wearable computer with a head-worn display. The
input device was a wheel. It worked something like an iPod wheel,
except it was a big, physical knob you wore on your chest and gripped
with your hand. Of course, this was long before the iPod made that
type of input commonplace. We took it out and tested it with Air
Force techs.

It was a lot of fun because, for one, the UI was a challenge—there
was nothing else like it (that I know of). Secondly, the combination
of unique software and unique hardware forming something very useful
and useable was pretty nifty.
