I haven't studied Labanotation (yet!) but I have studied Alexander technique and dance. In my experience, most people without training in movement do not really have a conscious understanding of what their body is doing in space. So, if you were going to build something based on a deep-understanding of body movement either the designer or the customer would need more than a passing knowledge of kinesiology. And, you definitely would need to actually watch people move.
