Cindy, there is an annual conference on Interaction Design for Children. I don't have the reference handy at the moment, but maybe they publish the talks or you can use that as a starting bibliogrphy/biography list from which to jump off to do further research.
Further, you might want to talk to the game design industry and early childhood education community as while this is "interaction design" in the larger context, it is usually almost always practiced by either of those communities. The work of LeapFrog is probably the best to explore.
