I'd second the recommendation for PFSense. We've been using it to drive
authentication and routing for 3 wireless networks here at work (Captive
portal with Vouchers, Captive Portal with RADIUS, and WPA2-Enterprise
backed by Active Directory).
It's very solid and featureful. It runs great in VSphere with the
VMWare support package installed.

So, I had wondered if I could build something similar as a router...
though had only found one possibility with 2 - Gb NICs.... it didn't
have serial though,

I've been really happy with both pieces. For the WAP321, I've
deployed them in pretty simple situations, but it can do multiple
SSIDs, etc.
Combined with the pfSense (or even simpler: m0n0wall) router, you
can easily setup a captive portal if that's your cup of tea.
