Temperature and humidity are the big ones, but a few other metrics might be
useful:

* Leak detection (useful if you have a raised floor, or drip pans in your
CRAC units)
* Air flow (useful to determine if you're getting enough circulation in
that rea)

I've been a long-time user of the IT Watchdogs products (
http://www.itwatchdogs.com/). I used their Weatherducks at my last job, and
we use the Microgeese line at my current job. The Microgeese support PoE
which is very nice for placing them in hard-to-get-to spots in the data
center.
