We've already gone some way of decoupling plumi.app, plumi.content and plumi.skin. It should be possible to set up a video site with just plumi.content, using the standard Plone theme and UI. I don't think socket.io was available back when we first released the first version of transcode daemon after the Budapest Plone conference & sprint. We gave a shot a few months ago at refactoring the daemon using Celery and RabbitMQ but it turned out that it would require much more time than was allocated to the task in order to do it in a sane and backwards compatible way, so we dropped it. Let me know if you release any code in that direction. I'd be happy to try it out.
