Simon, I have similar problems. It seems SlimServer is picking up all tracks after a rescan, but once it attempts to play or displaying them it is removing them at random from the database.

I looked up an album this morning (Kia by Blackalicious) and initially Slim only displayed 3 tracks but reported the album as having 18. Searching for the album in a few different ways it then decided there were only 3 tracks in total. ITunes displays (and plays) all 18 tracks.
