Sounds like you have it - you could set bitrate limiting to "unlimited" (this will stream as wav instead, should be lower cpu as long as you have enough network bandwidth between server and squeezebox)

Do I do that by unchecking FLAC and MP3 for the RTSP streams in Server Settings > File Types ?

I may have solved my problem. I noticed I had the quality of the
transcoding to HIGH. I set it to LOW and now CPU usage is in the
teens.

I haven't had a skip in the past 5 minutes. Thanks for all the
suggestions. I'll report back if I have any more problems, but I think
that may have been it.
