I would say about 2/3 of my library was ripped on my homebrew linux mp3
player, that was retired when I got my squeezebox. The remainder were
ripped with LAME or iTunes in OS X.

I use iTunes for tagging. Eveything should be ID3 v2.4 tagged.

Interestingly enough, if I browse artists, pick an atrtist with an
umlauted character in the name, and pick any album, no tracks show, but I
get the line "1 album with 13 songs by 1 artist". The track count is off
by the number of track naqmes that contain characters with umlauts. This
is all with the fishbone or default skins.

So I'm assuming that the filenames themselves have high-bit characters in them?

I'm going to take a guess and say that your Linux files were ripped with a
LC_CTYPE of iso-8859-1, and then transfered to the OSX system which stores
filenames as UTF-8. But no actual conversion happened.

Could you confirm this? What is your LC_CTYPE or LANG environment variable set 
to on your Linux box?
