Part of the reason I moved away from Itunes - you can edit the tags but it will, if its set to get tags and artwork from the store, change them back again. Just as frustrating as M$ Media player which can do the same.
Finally fixed it with dbPoweramp and a change from ALAC to Flac. Wish I would have read http://wiki.slimdevices.com/index.php/BeginnersGuideToFileFormats first.
