Which is no longer present on the network?
Now that's really weired. iPeng will show:
- The server you were connected to the last time (unless you use
"forget last server")
- All servers that respond to the server discovery
- All servers under "additional servers".

Do you have any chance to connect (iPhone or iPod) to a different
network and to see what happens then?

If it's something strangely remaining in the settings, uninstalling and
re-installing iPeng should help.
