sounds like you need to edit the tag information that is encoded within your FLAC files.
In which case you need a tag editor: there are many, but here is one commonly used (and free!). http://www.mp3tag.de/en/ Download, install, change any tag info you like. You may need to tell slimserver to wipe its cache to make it re-read the info.
