I think you need iTunes to activate the iPod Touch initially but after that you won't need it unless you also plan to use the iPod Touch as a portable music player. In that case, you will also need to use iTunes to copy music files to the iPod Touch. The iPeng App doesn't require anything to be installed on your Squeezebox Server and it will also work towards MySB.com if you use that.
