Slimserver has run perfectly well on all o/s I've tried.
Mine has worked fine on many flavors of OSX as well.
However, since you're having some trouble and appear to want to use a
*nix of some kind, have you tried downloading the slimcd.iso? I
believe that will let you boot from the CD and run slimserver from a
minimally sized Linux variant without any other intervention on your
part.
I haven't done this myself, but it would be pretty easy to try.
