Actually there is software that can remove the DRM from iTunes tracks, although I forget the details. Also, as a last resort you could use iTunes to burn a CD with the DRM'd tracks, and then rip that CD to FLAC. Again, the quality would only be lossy AAC quality, but at least it wouldn't be further degraded.
