I have the same issue and it is definitely SlimServer CPU usage. In my
case it was down to playing music on iTunes at the same time. I had an
iTunes plugin running that gets album art for songs and it was updating
iTunes on every song. That was causing SlimServer to constantly trigger
library scans. 

There is a monitoring facily in the utilities directory of applications
on the Mac called Activity Monitor. I used it to track down that the
buffer going to zero and stuttering was down to Perl running all the
time - and SlimServer is the only Perl app running, so that led to my
conclusion that it is constantly doing rescans.

I have disabled every possible triggering of automatic library rescans
- hopefully that will improve things.
