Disabling all the automatic rescans fixed it for me - I also took some memory out of an old PC and stuffed it in the Mac (an old PowerMac G4) and that helped responsiveness a *lot*. It seems that the 6.2 rescan is very slow and I would strongly suspect that all the drop outs on your system are due to rescans taking place.
