Most decent ripping programs fetch the metadata automatically.

The problem with having only mp3's is that you ever want to move to
another format, converting one lossy compression format to another tends
to be a very lossy operation, whereas a FLAC collection can always be
converted to whatever other format with minimum loss, as you haven't
actually discarded any data.
