Are these extenders supposed to be bi-directional? If so you might conceivably be picking up the display (its not in IR range, I don't expect, but a cheap extender might not tell the difference). Since you don't need the return direction, you could cover up the receiver on the unit in front of the SB.
A more conventional solution to your problem, at least within the slim world, might be (1) move the squeezebox into the kitchen where you really want it (then you'll be able to see what you are selecting!) or (2) get a wireless PDA and use that as the remote control.
