Personally I wouldn't ever use iTunes. There are
heroic efforts underway to make it work with
SlimServer with sometimes limited success. IMHO
iTunes is the problem - it just likes to take over
systems and do things its own way, not caring about
how other software programs might interact with it.
It wants to do everything on its own and expects the
user to stop using anything else. I call that rude
software behavior in my book and classify it as
malware.
I use EAC for ripping and Mp3tag for tagging. EAC, in
particular, can be complicated and intimidating at
first but once you get it configured properly (there
are lots of guides on the net) it is far, far more
powerful than iTunes, and 100% accurate.
I used dBpowerAMP for a while. It's more
user-friendly than EAC but it does not make 100%
accurate rips and the MP3 encoder is on a 30-day licence.
