Personally I tend to agree with the suggestion not to use iTunes - unless you have an iPod you need to drive, I find it unhelpful software (though undoubtedly easy to use).
For some basic beginners suggestions try http://wiki.slimdevices.com/index.cgi?BeginnersGuide EAC and MP3tag work very well for me too.
