AHA!  Found it!

The device I was looking for is a 3Com Audrey.

eBay always shows several.  There's an auction 
ending in 13 minutes with the last bid at $57 CDN. 
    You may be able to pick one up for less than 
$100 CDN.

This is not a tablet PC, it's an "Internet 
appliance" and was unfortunately not successful in 
that ill-fated market.  But it could control 
SlimServer quite well.

Unfortunately my memory failed me on this one.  It 
is not a conventional touchscreen and could not be 
buried into a wall as it may require a keyboard. 
The screen can be accessed using the clear pen.

Note you will need the Ethernet adapter, although 
since it has USB ports you could possibly get a 
USB network card.  But USB NICs usually need 
drivers, and I don't know how you could get a 
driver installed on an Audrey.

Worth some research because of the price though.
