They purposely made slimserver so that it can't change or delete your songs. That way, if somebody sits on the remote, you won't lose half your collection by accident.
There is a provision to flag any "problem" songs that need your attention - either for deletion, to fix a tag, or whatever. While the song is playing, press AND HOLD the ADD button on the remote. It will remove the song from the playlist AND add the track to a special playlist called "zapped songs".
