I'm not a linux expert, but I'm sure there must be a ton of tools out there that show you real-time throughput. As pointed out by others, the actual data transfer requirements *should* be way under your network maximums, so if you can measure the throughput as you connect / disconnect squeezeboxes, you can figure out if anything strange is going on. Then you can use something like Ethereal to pull it all apart, or at least to post a log of traffic from one SB for others to look at.
