I reenter this thread with some trepidation, recognizing the expertise of some of the other people who are helping you. That being said, I think the difference you're seeing between the behavior of your icecast stream and slimserver's stream.mp3 can be chalked up to stream.mp3 not being a true "stream", but rather a progressive download. I'll reiterate what I said earlier: I'm pretty sure that when using stream.mp3, the data is delivered to your audio client as quickly as possible. As far as your audio client is concerned, you're simply downloading an mp3 and listening to it as you download. Icecast, on the other hand, uses a proper streaming protocol and the data is delivered in "real-time".
I'm afraid I don't have enough knowledge of the technical differences between how the two delivery methods are actually implemented to go beyond that basic, fairly abstract explanation.
