I've been doing this with Tag & Rename. Ctrl+F4 (Multi File Tag Editor) | Edit all supported tag fields | add your cover art (from any location either by drag & drop or browse. It doesn't confuse my slimserver (linux & 6.3.1 from the Perl Source Code (tar.gz))
