Well, I couldn't wait for the weekend -- I got up to speed on mp3tag tonight, learned about using the "\" to create sub-directories from the tag fields, fixed a few more tags, then let it rip on restructuring all my tunes. Amazing how well that went - I've now got a nicely organized \My Music directory. Only a few duplicate songs now remain at the root level. I even grabbed a few album covers off of Amazon.
I then did a clear/rescan in slimserver, and voila, my artwork problem is gone!
