At a guess, I suspect the names of your artwork files may not always be correct if you are cutting and pasting them from Amazon into the album folders.
Are all the files called folder.jpg / cover.jpg / album.jpg or thumb.jpg ? May I recommend 'this section' (http://wiki.slimdevices.com/index.cgi?AlbumArtwork) of the wiki for an explanation as to how Artwork works in Slimserver ? There are also some semi-automatic tools that will do this for you (although perhaps not automatically for both Slimserver and IPOD).
