It sounds like the audio will be important, so consider hiring a
professional to advise on acoustic treatments and system choices, but
doing your internet research before meeting with them will help you
both.
If you like the idea of being a 'wired' company, you could make
audio/video recording/playback your hedgehog's advantage ('Good to
Great' (http://www.jimcollins.com/)) with a system not much different
from a squeezebox:
