There are two steps to a credit card transaction, authorization and then capture. In the authorization step, the funds are verified and reserved for up to 30 days. It's not until the capture step that the funds are actually transferred.
It is strictly against the terms of their Visa/MC merchant agreement to capture funds before shipping - that is the main reason that the two-step process exists. Furthermore it is very unlikely that this would be set up to happen automatically, so they're not on vacation. If you've been unable to reach them, you should call your bank and issue a "chargeback" immediately.
