Check out a Kurbobox (www.kurobox.com). They are basically the same thing as the Buffalo line of NASs, but ship without hard disks, so it sounds perfect for your needs. I store my music library (+ other backups) and run slimserver on a Buffalo LinkStation and it works fine. And it would have been easier if I had gone the Kurobox route, because then I wouldn't have had to re-flash the firmware.
