It would seem that since you are using your external IP address your requests from the Softsqueeze machine are going through your internet connection to your ISP which is then routed back down your internet connection to your SlimServer box. You will have traffic coming and going on your internet connection which will probably choke it out a bit.
For testing purposes you can use your internal ip address and the performance will be much better. You've proven that you can stream remotely, so set up Softsqueeze at work and give it a try. The performance won't be as good as your local network, especially if you're transcoding, but it's not that bad either.
