Where are you going to put the computer with the server software on  
it?  I think that's going to be the bigger problem.

You might want to consider something with good iPod integration.   
Harman Kardon makes some nice products (I use their 1st gen Drive &  
Play and it's pretty good).  Alpine and--I believe--Clarion have  
pretty well integrated displays and controls, too.  I like the fact  
that the Harman Kardon controller knob & display can be mounted where  
I can see and use them without really having to look away from the road.

If you're going to have an onboard computer that you can load with  
slimserver and your music that'd be different.
