If just using the "learn" function of a universal remote (remote's
placed facing each other, each IR signal is learned as each individual
button) then you can only emulate what is available via the SB remote.

If you want to get into "macros" (universal remote remembers a sequence
of IR commands) that's a different story and can be complicated but
doable.
