> Does anyone know of some other way we can track Word documents?

Word documents come with built-in revision control and a number of features
for tracking the editing history of a document. This integrates much more
seamlessly than using a Markdown <- pandoc -> Word bridge would. If you're
going to write in Markdown, just use a Markdown editor. You're going to
lose too many things in the conversion for it to make sense to author in
Word if you will be switching back and forth with Markdown.

I know that SVN had better integration for version control with Word
documents, and it's possible you could things up with Git and an svn
bridge, but that also seems complicated.

I've had good luck with tools like Google Docs for collaborative editing of
documents, and there are some other nice online tools emerging for shared
authoring of scholarly works.

Hope this helps,
Aron
