Perhaps not a silver bullet, but:
Emacs org-mode has some pretty awesome table functionality, including formulas.
These get rendered properly (like markdown tables) on GitHub, since GitHub
renders .org files. Downside is that people need to install/use emacs and
org-mode syntax to get the niceties.
GitHub also nicely formats csv files fir display, and these could be edited in
any spreadsheet program and committed. Downside is that these are not embedded
in other files like markdown tables.
