Actually, many of the OS X shortcuts can be remapped under the keyboard shortcuts tab of keyboard and mouse preferences, but this doesn't seem to hold true for VO keys. Still, I've yet to see a VO key come in conflict with any application keystrokes and, once used for a while, the VO keys seem to make more sense to me than the keys of any other GUI screen reader.
