I'll only comment on the first item and when composing a message I
too find myself on the send button.

2. I haven't found a means to do the following, but let me explain
and I did speak with an Apple rep and what she had as a mail option
and what I have is different. Here's the situation.
If you select an account and then mailbox behaviors under the
preference tab, you can have your mail upon deletion moved to trash
and there's a checkbox for this action. What she stated to me is
that the option said something along the lines of move to trash,
but what I read is move to a separate mailbox. The item to the left
of the checkbox says trash and it appears there are no means to
change where the mail would go. This is Mail 2.0.5. This all ties
to the final question.
I was asking Apple about this because I get hundreds of messages a
day and the trash fills rather quickly. Sense I do not close mail
very offten, I wanted it to delete mail taht was older than one
day. I noticed much to my surprise that in fact Mail wasn't
deleting anything. It appears you must close in order for the trash
to be cleared. I thought that Mail would automatically clear the
trash while running. I think I'll submit this as an enhancement to
Mail.
