I haven't had much luck renaming a signature after it was created but it can be renamed upon creation. first, Make sure that you have the "Home" selected when in the first Table. Then navigate down to the first unlabeled button, if you press VO keys+h on it it should read Create Signature. Activate it with VO keys+space then type the name you wish to have the signature called. Then navigate to the HTML field and enter the text for the signature. You can delete old signatures by either using the Remove Signature button when the given signature is selected or by selecting the given signature when in the Table of Signatures then pressing the "delete" key.

Also, how do you delete an entry from Mail's addressbook I tried the obvious, highlighting the entry I wanted to remove and hitting the delete key - nothing happened.

Works for me. Go into the actual Address Book application from your Dock. Locate the Table of addresses and interact with it. Navigate until you find the address you wish to manipulate then hit the "Del" key. I don't think that you can do this from within Mail, it must be done from the Address Book app.
