why this probably occurs is that you have it set that way in your Mail preferences. How you ask. In the Composing tab, there is an item that reads somthing like "Send new mail From" and the default is "Last Viewed mailbox". what I suspect is happening is that you are reading messages from various Mailboxes due to your multiple accounts and thus this will affect which account the next new message is being sent from. I don't remember the other choices in that pop-up, but it may be worth looking at them.
