Hey James - I just have no need for Spotlight. The only reason why I would ever even touch Spotlight is to use it as an application launcher, but I have quicksilver (http://blacktree.com) for that. Otherwise Spotlight just hogs resources on my computer I hardly have for the applications and processes I actually have a need for and use, let alone anything else.
As for the directions: For Dashboard, open Terminal.app in your Utilities folder in Applications. Type in the following line: defaults write com.apple.dashboard mcx-disabled -boolean YES. Afterwards, either restart the dock by typing in "killall Dock" or just log out and log back in. For Spotlight, it's a lot more complicated and dangerous. Do keep in mind that if you disable spotlight, certain applications that use Spotlight will no longer work or will stop working as expected. Off the top of my head I know Mozy doesn't work (and their Mac support guys are really stupid about this..), and searching your mail from Mail.app will also become impossible. Spotlight's scattered all over the place in many apps, so the list is certainly longer.
